Smokey Street Corn

Do you ever have something at a restaurant and become determined to replicate it at home? That's what inspired this smokey, sweet street corn! To be honest, I never gravitated towards corn - until now! This saucy, roasted corn is so addicting and the smokiness that the fire infuses takes it to the next level. I always make more in hope to end up with leftovers, but it's one of those dishes that our guests tend to devour every last bite of!
  • 3 large bags of frozen corn

  • 4 tbsp butter

  • Sprinkle of salt & pepper
Sauce Ingredients
  • 3 tbsp olive oil

  • 4 tbsp sour cream

  • 4 tbsp mayonnaise

  • 2 tbsp fresh lime juice

  • 3 tbsp grated Cotija cheese

  • 2 tbsp fresh cilantro

  • 1 tbsp chili powder

  1. Fire up the Sherman Cooker to get a hot bed of coals established and a hot fire burning.
  2. Pour the bags of frozen corn into a cast iron skillet
  3. Place cast iron on OSC Cooking Grate and cook until butter melts and corn begin to brown
  4. In a bowl, mix together all sauce ingredients
  5. Once the corn is cooked and slightly browned, stir in the sauce and allow it to warm
  6. Once the sauce is warmed, remove the cast iron from the fire and dig in!
